For Chefs…

While the majority of our products are reserved for our box program, we do love working with local chefs who share our values and appreciation of heritage breeds. We reserve a few pigs for chefs each year, and generally have animals available in the late summer/early fall. We aim for approximately 200lb on the rail, and can ship sides or whole if needed. It doesn’t get much better than Brass Bell Farm’s pork. Heritage breeds are selected for flavour and raised on pasture in the fresh sea air. Since we are using the whole animal for our charcuterie programme, it is very important that not just the meat tastes great, but also the fat, which is so clean and delicious, because Amber uses organic feed and plenty of free ranging. We began working with Amber in 2024 and started sourcing whole pigs and sides of pork from Brass Bell Farm in 2025. From the start, we were impressed by their meat’s exceptional quality. The Red Wattle cross pigs they raise are deeply marbled, flavorful, and perfectly suited for whole-beast kitchens.
